The Story

New Dawn was born from a family where flavor and connection to mother earth runs deep. Founder, Dr. Dawn O’Neal comes from a long line of chefs and supertasters — people with an extraordinary sensitivity to taste and balance. From her grandfather’s Southern kitchen supplemented by fresh, organic, fruits and vegetables at the height of flavor to her father’s whiskey cabinet and childhood moments spent on the river, she grew up surrounded by the art of flavor: how to build it, how to respect it, the influence of the environment on it, and how to recognize when something is truly exceptional. This passion blossomed during graduate school, where Dawn bonded with fellow science enthusiasts over whiskey and evolutionary biology. Despite dreaming of starting a distillery in retirement, it was a moment of burnout and a nudge from a professional coach that pushed her to transform her dream into reality. In late 2023, she decided to drive change through her own business, crafting premium craft spirits with a mission rooted in sustainability and authenticity. These life lessons shaped her craft, and every bottle of New Dawn reflects that lineage — a whiskey defined by its rich, robust, and complex character celebrating diverse distilling techniques and the influence of climate and geography. It’s small-batch, cask strength, and uncompromisingly premium, sustainable at every step from local organic grains to recyclable packaging, created by someone who doesn’t just make whiskey but understands it on a cellular level. For Dawn, whiskey is about honoring mother nature and the senses that built it. Each sip carries generations of refinement, intuition, and Southern soul. There is no taste like this.

CEO and founder of New Dawn Distilling, Dr. Dawn O'Neal has woven a fascinating journey through academia and non-profit leadership before stepping into the vibrant world of spirits. A proud graduate of Washington University in St. Louis, where she was active in the service fraternity Alpha Phi Omega, Dawn later earned her graduate degree in Ecology at Indiana University, Bloomington. Her early career was dedicated to non-profit work, culminating in executive roles that focused on environmental conservation. Her ecological background adds another dimension to her company’s values. Environmental justice activists have long documented how pollution, climate change, and ecological degradation disproportionately impact Black communities. O'Neal brings that understanding into her business practices, refusing to separate environmental sustainability from social justice. Her commitment to organic, locally-sourced ingredients reflects an integrated worldview that recognizes how environmental and social systems interconnect.
